Moderately expressed cheese, sour, slightly sharp, with taste and a smell of garlic and tomatoes, without foreign taste and a smell. The dough is tender, plastic, homogeneous throughout the mass. Allowed slightly dense dough, brittle at the bend. Cheese has a pattern of irregular eyes, angular and slit-shaped with evenly spaced throughout the mass of tomato inclusions. Color from light red to dark red, uniform throughout the mass.
